I finally got around to making them. I used “Pamela’s” Artisan gluten/wheat/dairy-free flour (Whole Foods) and the cookies I made with this flour turned out great. They held their shape and I don’t think that anyone would be able to tell the difference between these and those made with regular flour.

A reminder to those who might make these gluten free. If you need to flour the surface of your board when you roll them out, make sure to use the gluten free flour (I remembered to do that this time, but not the first time I tried to make gluten free cookies). Also, a silicone rolling pin is great for these cookies. They don’t stick to it.

I haven’t tested this recipe (nor many of my recipes) with gluten-free flours. I would test a small batch and see what happens! And if you do, let me know how it goes!
