I doubled the recipe, increased the carrots by 30% and added a dash more nutmeg and cinnamon than called for, and I ended up with two gorgeous loaf-cakes that were gobbled up within a day. Wonderful recipe, thank you for sharing :)

Just made these, they were very good. Loved the cake, but my frosting was a bit thin, even after adding more sugar. I only mixed for about 4 minutes. Would it have thickened if I had continued mixing for the rec. 5 to 8 min.?
